Most home preservation advice is a coin flip. Half of it comes from a tested USDA process; the other half comes from a relative's handwritten card, a blog with a pretty photo, or a video that skips the one step that keeps you out of the hospital. The trouble is that bad canning rarely announces itself. A jar of green beans sealed the wrong way looks identical to one sealed the right way, and botulinum toxin has no smell, no taste, and no color. So this course starts where the danger is real and works outward from there.
